I know it has been a while since I have been around, let a lot shared any recipes. Once the busy/demanding schedule of school was over my time was spent working in our basement.
We had another flood the beginning of the month...so once again we had a mini swimming pool in the basement. After all the water subsided we have been slowly working our way through all of our stuff preparing for a yard sale. If anyone is in my neck of the woods this weekend...STOP BY...and BUY!!!
Anyway, back to what you are really interested in...well at least me, FOOD!
Here is what you need:
1 1/2 to 2 cups penne pasta
10 oz. frozen spinach, thawed and drained.
1 lb. chopped chicken
1 Tbsp. basil leaves
1 jar spaghetti sauce
1 can diced tomatoes, drained
2 oz. cream cheese
1 cup mozzarella
2 Tbsp. Parmesan
Cook the pasta,
Add the spinach the last few minutes.
Cook and stir chicken and basil leaves in a large skillet on medium for three minutes. I cooked my chicken in the microwave for a few minutes first.
Stir in sauce and tomatoes, bring to a boil. Simmer on low for three minutes.
Stir in cream cheese.
Drain the pasta and return to the pan. Add the chicken mixture and 1/2 cup mozzarella.
Spoon into a 2 qt. casserole dish and bake for 20 minutes at 350 degrees.
Top with remaining cheeses and bake another 3 minutes, or until cheese has melted.
Makes 6 generous portions.
I really like the flavor the spinach adds to a relatively basic pasta dish. Hope you enjoy!!

ReplyDeleteJust wanted to know that your flip flop package is not coming wrapped all pretty with bows and cards like I wanted it to. My son has a fever and I do not want to take him out of the house. So, I ebay'd it to you :( two separate things will be coming to you. I am so sorry that I couldn't do my "special touches" that i always do. This makes me very sad :( I hope that they come in a timely manner. Please keep me updated!
