What's for Dinner Wednesday-Couscous and Tuna Salad

I love this summer couscous is cool and sweet...just the way I like it!!! 

You are gonna need:
1 cup couscous
6 oz. (or more) of canned tuna
1 small tomato, diced
2 tbsp. lemon juice
4 tbsp extra virgin olive oil
2 tsp. honey

Cook the couscous according to the packaged directions. 

Combine the cooked couscous, tuna, and in a bowl. 

In a small bow combine the juice, oil , and honey.  Whisk together until combined.

Pour over the couscous salad and mix well.

Refrigerate and Enjoy!!

  1. I love couscous I've had it a couple of times and made if once for my family and everyone hated it, so I haven't had it since. I think I'll make some just for me. Thank you for the recipe.
