What's for Dinner Wednesday-Lemon Chicken and Potatos with Squash and Onions

 This is another recipe from E-Z Meals....seriously if you haven't checked out this meal planning site, you should.  Your life is just waiting to be simplified.  I have been cooking meals from this awesome Weight Watcher Plan for 3 weeks.  It is so nice to have everything listed out that I need to get at the store...and it is divided up into sections so you aren't running back and forth all over the store trying to get everything on the list. 

Anyway, back to what I cooked for supper. 

You are gonna need

Lemon (1 large or lemon juice)
Olive oil
2 tsp. Oregano
1 tsp. Rosemary
2 tsp. minced garlic
1/2 tsp. salt
1 1/2 lbs. chicken
1 1/2 lbs. potatoes, cubed
1 1/2 lbs. squash
1 large onion, diced
2 tbsp. butter
2 tbsp. water
1 tsp. garlic powder
1/2 tsp. pepper

Combine the oil, lemon juice, oregano, rosemary, garlic, and salt in a bowl.  Mix well.

Coat the chicken and the potatoes in the mixture and place in a roasting pan that you have sprayed with cooking oil. 
Bake for 35 minutes at 425 degrees.

Place the butter, water, salt, garlic powder, squash and onions in a skillet.

Cook on medium heat for 7-9 minutes.  The squash and onions should be nice and tender when it is done.

Now serve up the yummy goodness and enjoy!
