What's for Dinner Wednesday-Spicy Chicken and Vegetable Couscous

First off...this calls for a lot of ingredients, but don't get worried...it is an easy meal to make.

You are gonna need:
1 lb. chicken cubed
1 zucchini
2 cups cauliflower
1 cup baby carrots
1 onion, chopped
1 bell pepper, chopped
2 garlic cloves
10 oz. couscous, prepared as directed
2 tbsp. olive oil
1 tbsp. cumin
1 tbsp. coriander
1/2 tbsp. turmeric
1/4 tbsp. cayenne pepper
1/8 tsp. salt
1/8 tsp. pepper
1 1/2 cups chicken broth
2 cans diced tomatoes
3 tbsp. chopped  cilantro (optional)

Cut the chicken into 1 inch cubes and sprinkle with salt and pepper.  Add 1 tbsp. of oil to a large frying pan.  Place over medium-high heat.  Add the chicken and stir until brown, about 5 minutes.  Transfer the chicken to a plate.

Add the remaining oil to the pan.  Add the garlic and onion and saute' for 5 minutes. 

Stir in spices and cook for one minute, or until the spices are fragrant.

Add cauliflower, carrots, and  chicken broth, bring to a boil.  Cover and reduce heat and simmer for 10 minutes. 

Stir in the pepper, zucchini, and tomatoes.  Simmer uncovered for 8-10 minutes, until the zucchini is tender.  Add the chicken.

Cook the couscous according to the directions on the package.  If you want your couscous to have more flavor make it with chicken broth in stead of water.

Spoon chicken and vegetables over the couscous and top with cilantro (optional).

Your done!
